The central claim is not that heritage fermentations are intrinsically superior.
It is that they instantiate a higher-dimensional causal architecture whose additional guild interactions, temporal stages, and lineage dependence generate testable differences in output-space breadth relative to ecologically compressed industrial systems.
The model identifies colonic fermentable carbon flux as the dominant control variable under defined conditions, and formalizes butyrate production as a multiplicative function of carbon delivery and colonic regime capacity.
